Grading of Wagyu Steak is taken very seriously with ratings given based on quality, appearance and flavour. The Australian Wagyu grading system gives the beef a grade from 1 to 5 (1 being the lowest and 5, the highest). Quality scores range from 1 to 9, with this scoring encompasses marbling and colouring.
